THE CHEF

João Marcos Lisboa Fernandes, A.K.A. João do Sushi, started his career in Ilha Bela, near SãoPaulo.

After a brief period as an apprentice in the Gendai restaurant, João trades Ilha Bela for Ilha da Magia (Floripa) and begins to write a successful career in the gastronomic scene in Santa Catarina.

As Chef in the Golden Café and later in the El Divino, João's work captures the public's attention through the perfect cut and manipulation of the fish charmed everyone by presenting his creations.   

​

The dream of having his own restaurant comes true with his partner, creative director, and brother-in-law Ricardo Tronquini, a successful publicist and currently living in Singapore, who is an unconditional fan of João's sushi.

​

Recently, Joao was in Japan to learn new techniques at the Nagoya Sushi School and the World Sushi Championships in Tokyo.

​

Your goal is to make Koniko the best Japanese restaurant in Floripa and one of Brazil's best.

LIVING ON KONIKO WAY 

​

The idea of Koniko was created by the partnership between chef João and the creative director and João's brother-in-law, Ricardo Tronquini, to write a success story on the gastronomic scene of Florianópolis.

​

Koniko was born literally in Ricardo's mother's backyard, in a place off the beaten path of the famous restaurants of Jurerê Internacional and Beira Mar Norte, and offers the best of Japanese cuisine in a warm and modern atmosphere. 

​

The restaurant's concept is inspired by Ricardo's travels around the world, where comfort, modernity, and efficiency were north of the project.
